Oh. My. Wow. These pancakes, hands down, were the best I've ever made, possibly ever tasted. They are light, fluffy, not too sweet, and are scented with vanilla deliciousness. I can't wait until the next time I get to make these.

This dessert is SO refreshing on a hot summer day. I've been tempted to take mine out to our deck to eat it in the evening, except that the mosquitoes have been terrible here. (We live near a swampy wildlife preserve.) Nevertheless, this lovely dish is light and fresh, a nice change from the heavy cakes, cookies and other desserts of late. I chose to make ours non-alcoholic, but if you wish for alcohol here, pour a bit of grappa or vodka over the top just before serving.

I've always said I'm not a huge fan of breakfast foods. Whenever traveling, I have to work to find a place that sells just what I want, nothing too greasy or heavy on the meat side. That being said, looking back over my posts, many of them have to do with breakfast foods. Part of that may be because I choose to post midday, and need something I can make before that, photograph, and, most importantly, get my family to eat; mostly though, I think it's that I'm trying to find a good breakfast that I like, that I can reliably turn to week to week.

Carrot Cake Pancakes with Cinnamon Honey Butter was a heavenly scented, delicious, relaxed breakfast. I wouldn't recommend making this on a busy weekday morning, unless you plan on getting up early, but it's wonderful to unwind with on a Saturday morning.

This delicious breakfast is beyond simple. Prepare everything the night before, and in the morning, simply pop it in the oven when you wake up and let it bake while you get ready for your day. If you like, you can trade the blueberries for any berry you prefer, though if you use strawberries I recommend slicing them first. I should divulge that this is a very egg-heavy recipe, and that I halved it, using an 9x9 pan, for that reason.

This is my new favorite steak recipe for the summer. Actually, the first time we made it was in January! We had to relight the grill a few times, and it took three times as long as it should have to make, but it was delicious even then! I love it because it's quick, easy, (especially if you have a food processor, but even if you don't), and oh so tasty. I'm not a great fan of cilantro, but, even though its a major player in this dish, it doesn't bother me here. Serve with grilled tomatoes and grilled garlic bread for a complete meal.

I find myself in the midst of spring cleaning. It is absolutely gorgeous outside, and I've locked myself indoors with noxious chemicals. (Well, mainly clorox wipes and dust rags, but still...) It looks so lovely outside, I find myself wanting my home to compare, if not match, that beauty. And so, with dust rag in hand, I have been sorting through my shelves, my cabinets, and my closets and dusting everything in sight while tossing in the donation bin anything that has seen better days.

These brownies are great, with or without the bourbon. Gooey, chocolatey, and not cakey, as so many brownies are. Personally, I prefer a lighter dose of the alcohol than what is recommended, or none at all, but feel free to adjust to your own tastes. Be warned though, the alcohol DOES NOT cook out.
