I've made some discoveries about my blog over the years I've kept it. First of all, I post whenever I feel like it, not on any sort of schedule, despite often trying to keep the posts regular. I blog more when my family is occupied, or when I'm on a laptop and can post while enjoying their company. I'm still working out how to keep myself motivated to continue sharing with you all, but I will say this. I do love having this site. It's a lovely spot to share my thoughts once in awhile, and I love the conversations that come up over a recipe, a picture, or whatever is going on at the moment. There may be changes ahead to site design, content, et cetera, but what will stay constant is my love to share with all of you. So thank you, for sticking with me and leaving a thought every so often. If you have favorite posts, requests for content, or any input on where this website should head, please let me know. Onion Sandwich.
This is not for the faint of heart. This is not a pretty dish, nor does it smell like, well, anything other than onions. No, this is not a sandwich for everyone.
However. If you are one of those people, the people whose steaks are incomplete without sautéed onions, whose burgers are sadly lacking when not topped with this versatile vegetable, whose salads must have a bit of oniony crunch to them, well, let me say you and I are kindred spirits. And so, dear friends, I would like to share this with you.

This recipe is so delicious, and for a made from scratch pudding, about as easy as you can get. I love raisins in this, but you don't necessarily have to use them. The original recipe calls for whole milk, but I used 1% with no problems. Also, as I'm out of lemon zest, and lemons, for that matter, I used a bit of orange zest in its place, and you know, I think I like it better! Whatever you choose, you won't be disappointed. Enjoy!

I've been making this pie for a long time. I don't know when I found the recipe in my mom's recipe box, but I know I offered to make it for Chris back when we weren't even dating and I was supposed to come over for dinner and meet his parents. I chickened out of making it because my mom and a friend convinced me that it was too...oh I don't even remember the phrasing, but that I wasn't to give the impression that we were in a serious relationship. Oh, the sweet, sweet irony. I've since made it for my husband, his parents, and many others over the years. It is my pie specialty, and it's deceptively easy.

I've been looking for a good enchilada recipe for awhile now. You see, I love ordering them at restaurants, but making them at home. Guaranteed to be a flop, every time. That is, until I was gifted the Pioneer Woman's cookbook and discovered that her recipes never flop. Seriously. Every single one I've tried has turned out famously, and most are simple to boot. When I came across her enchilada recipe, I admit, I hesitated. See, there's nothing obviously wrong with the recipe, nothing at all wrong with it. I was just afraid I'd ruin my streak with her recipes and have yet another flopped enchilada meal. I was so wrong. These are delicious, simple, properly messy (all enchilada recipes I've tried have that in common,) and quite filling. If you've had the same luck making enchiladas at home as I have, please, end your misery, make these. Tonight, if possible. You won't regret it. Enjoy!

I love these cookies. Normally I could care less about sugar cookies, as there are so many other delicious cookies out there, many of them with chocolate. (Mmm, chocolate...) When I do want sugar cookies I usually go for those horrible store bought ones with the neon frosting that's almost as thick as the cookie itself. There is value, however, in occasionally making the rolled sugar cookie. Making shapes, decorating in festive styles for whatever the holiday, and pulling out all those fun sprinkles in the back of your cupboard, all make it somewhat fun to make sugar cookies.

This weekend I am visiting family to celebrate my Gramma Eva's 85th birthday. While I'll post on this whole weekend after it's through, I thought I'd share a lovely surprise from today.
This afternoon, my mom and I snuck away from the house to run a few errands and to get a new pair of jeans for me, as mine are now too large. (yay!) After trying on MANY pairs in different cuts, lengths, and styles, we made the lovely discovery that I am down not one size, as I thought, but two jean sizes! Woot! The new jeans are ever so slightly tight, but as the next size up was falling off, they'll work well. Besides, today was that much more incentive to keep working out! (let me tell you, I needed that!) on top of all that, I got a free shirt, just for buying my jeans!
